Yesterday afternoon, I watched my friend’s two children while she went for an appointment at the Medical Center.  The kids are one and four and would be eating dinner with us, so I made Lasagna before they arrived so that they could have my undivided attention.  Lasagna is a great meal in more ways than just taste.

  • You can make it ahead, and pop it into the oven later.  Great for plan ahead dinners on busy days.
  • It is versatile.  You can use homemade sauce for a fullbodied flavor, or substitute a jar of spaghetti sauce in a pinch.
  • It is multifaceted.  You can do meatless or even vegetarian.  My favorite vegetarian is Zucchini Lasagna.
  • Who ever came up with the no boil noodles was a genius.  Takes less time to make now!
  • It makes a lot.  Great for lots of dinner guests, leftovers, or enough to share. 

I sent some home (along with a salad and dessert) for my friend when her husband came to pick up the kids, ’cause who wants to cook when you’ve had to deal with a long doctor visit, and Houston traffic!!!
