Yesterday afternoon, I watched my friend’s two children while she went for an appointment at the Medical Center. The kids are one and four and would be eating dinner with us, so I made Lasagna before they arrived so that they could have my undivided attention. Lasagna is a great meal in more ways than just taste.

You can make it ahead, and pop it into the oven later. Great for plan ahead dinners on busy days.

It is versatile. You can use homemade sauce for a fullbodied flavor, or substitute a jar of spaghetti sauce in a pinch.

It is multifaceted. You can do meatless or even vegetarian. My favorite vegetarian is Zucchini Lasagna.

Who ever came up with the no boil noodles was a genius. Takes less time to make now!

It makes a lot. Great for lots of dinner guests, leftovers, or enough to share.
I sent some home (along with a salad and dessert) for my friend when her husband came to pick up the kids, ’cause who wants to cook when you’ve had to deal with a long doctor visit, and Houston traffic!!!

Ooh, I’m so glad you linked to that veggie lasagna recipe, because I’ve been meaning to try making it. And I’m with you on the no-cook noodles (another thing I want to try): they definitely belong in the genius category!
